Cream Cheese Ball
Mix 1/4 - 1/3 cup Texas Sassy Pickle Relish with Cream Cheese or Cheesemakers Chevre Goat Cheese (11 oz.) and form into a ball. Place on serving dish with crackers and/or thin apple slices.

Pineapple Cream Cheese Ball
1/4 cup Texas Sassy Pickle Relish or to taste
8 oz soft Cream Cheese or Cheesemakers Chevre Goat Cheese (11 oz)
1 8 oz. can crushed pineapple in it's own juices, drained dry
1 cup finely chopped pecans, 1/2 cup in recipe and other 1/2 cup to cover the ball.

Mix all ingredients and form into a ball. Cover with remaining pecans. Serve with your favorite cracker or thin apple slices.

Pineapple Cream Cheese Spread Party Sandwiches
1/4 cup Texas Sassy Pickle Relish or to taste
8 oz soft Cream Cheese or Cheesemakers Chevre Goat Cheese (11 oz)
1 8 oz. can crushed pineapple in it's own juices, drain dry(reserve juice)
Optional: 1/2 cup finely chopped pecans; bell pepper or chives

Blend ingredients. For spreading consistency, add either relish or pineapple juice.  Spread on Pumpernickel bread. Using large slices of bread, you can use cookie cutters to create a theme with the bread or you can use the prepackaged 2" square slices. You can also use Jalapeno Flour Tortilla, spread it on the tortilla, roll it and cut into 1/2" slices. Arrange items on serving dish. Have fun with this, it is so versatile.

Texas Sassy Cream Cheese Roll Up
1/4 cup Texas Sassy Pickle Relish or to taste
8 oz soft Cream Cheese or Cheesemakers Chevre Goat Cheese (11 oz)
1 8 oz. can crushed pineapple in it's own juices, drain dry(reserve juice)
Optional: 1/2 cup finely chopped pecans; bell pepper or chives

Spread the mixture evenly over a 12" tortilla, roll it, cut into 1/2" slices and serve.

Yields about 6 rolls and each roll yields approximately 12-15 slices. To stretch the recipe, cut the sliced rolls in half and put toothpicks in them to help hold them together.

Egg Salad
6 lg boiled eggs
1/2 cup low-fat mayonnaise
4 Tbsp. finely diced celery
2 Tbsp minced red onion
1/4 cup Texas Sassy Pickle Relish
Optional: 2 Tbsp Texas Sassy Mustard Sauce

Mix all ingredients but eggs. Peel and chop eggs. Add to mayo mix and season with salt and pepper to taste.

Corn Bread
1/2 cup Texas Sassy Pickle Relish or to taste
2 cups Self-Rising Yellow Corn Meal Mix
1-1/2 cups milk
1 egg, beaten
1/2 can cream corn
1/2 medium onion, finely chopped
1 cup cheddar cheese, shredded
Oil/PAM Spray

Preheat oven to 425 degrees. Combine all ingredients and mix well. Pour mixture into sprayed or oiled 9" square baking pan. Bake 20-25 mins. Yields 10 servings.

Tuna/Chicken/Ham Salad
1 small can of tuna, drained (or 1 cup of chopped chicken or ham)
1 tbsp mayonnaise
1/4 jar of Texas Sassy Pickle Relish
1 tsp. Texas Sassy Mustard Sauce
1 cup finely chopped celery
1/4 cup finely chopped onions
1 sm bell pepper

Add all ingredients in medium size bowl and mix well. You can also use your favorite recipe and just add Texas Sassy Pickle Relish and Mustard Sauce to give it a unique, spicy flavor.
